Lentil Soup

Ingredients – serves 4-6

1 medium onion, chopped

2 tbsp vegetable oil

1 clove garlic, crushed

1/4-1/2 inch piece of ginger

170g carrots chopped

2 sticks celery chopped

115g red lentils

860ml vegetable stock

Juice of one lemon

1 red chill – deseeded- optional

2 tsp Turmeric

1 tablespoon fresh chopped parsley

Coconut milk – optional


1.  Heat the onions in a very large saucepan and gently sauce the onions, garlic and ginger

2.  Add the carrots and celery and cook, stirring frequently for 10 minutes

3. Wash the lentils, twice in cold water and drain

4.  Add them to the pan, add the parsley and stir well.

5. Pour in the vegetable stock, cover the pan and simmer the soup for 90 minutes, until the lentils are very soft.

6.  Add coconut milk if needed and blend to desired consistency
